Steirerhof Recipe of the Month

Every month our head chef, Johann Pabst, presents a stylish, tasty and above all healthy dish for you to copy at home, if you wish. Easy to follow whether you are a beginner or already an avid amateur chef.

Saltimbocca of zander
on a bed of vegetables, served with pesto


Ingredients:
(for 2 people)

200 g zander (pike-perch)
4 thin slices of cured ham
butter
a little flour
50 g fine wheat-based noodles (e.g. linguini or tagliolini)
50 g vegetable julienne (zucchini, carrots, celery root, etc. chopped into fine matchsticks)
2 dsp. cream
salt and pepper
hazelnut oil (to taste)


Pesto:

2 cl olive oil
1 dsp. Parmesan
1 bunch of basil
5 g pine kernels
salt, ground black pepper
1 clove of garlic


Method:

Gently tenderise the pieces of zander, and wrap them in the ham. Set them aside for pan-frying. Cut the vegetables into long, thin matchsticks - the zucchini is best peeled first using a zester. Blanch the vegetable sticks in boiling water and drain thoroughly. Boil the noodles until al dente and drain thoroughly.

For the pesto, mix all the ingredients in a mincer (e.g. Moulinette) until they form a creamy paste. Season well. Go easy on the garlic!

Dip the fish briefly in the flour and fry quickly on both sides until crispy. Put the noodles and the vegetable sticks into a frying pan, heat and mix gently. Add the cream and season with hazelnut oil to taste.

Spoon out the noodles and vegetables onto pre-warmed plates, place the fish fillets on top and serve as required with the pesto.
